Basil pesto and crunchy panko make a bright, easy topping for baked salmon.
Serves: 4 | Total time: 20 minutes
Ingredients
- 4 salmon fillets
- 1/3 cup basil pesto
- 1/3 cup panko breadcrumbs
- 2 tablespoons grated Parmesan
- 1 tablespoon olive oil
- Salt and pepper
Instructions
- Heat the oven to 400°F and line a pan with parchment.
- Season the salmon lightly and spread pesto over each fillet.
- Mix the panko, Parmesan and oil and press it on top of the pesto.
- Bake 12 to 15 minutes until the crumbs are golden and the salmon reaches 145°F.
- Serve with roasted vegetables or pasta.
Pin Tip
If the topping browns too fast, cover loosely with foil for the last few minutes.
Food Safety
Cook salmon until it reaches an internal temperature of 145°F, measured in the thickest part, and the flesh flakes easily with a fork.
