Salmon and vegetables roast together on one pan with a tangy maple Dijon glaze. Minimal cleanup, maximum flavor.

Serves: 4  |  Total time: 30 minutes

Ingredients

Instructions

  1. Heat the oven to 425°F.
  2. Toss the potatoes with half the oil and some salt and roast 12 minutes.
  3. Push the potatoes aside and add the asparagus and salmon to the pan, drizzling the asparagus with the remaining oil.
  4. Whisk the maple syrup and Dijon, then brush it over the salmon.
  5. Roast 12 to 15 minutes more until the salmon reaches 145°F and the potatoes are tender.

Pin Tip

Give the potatoes a head start so everything finishes cooking at the same time.

Food Safety

Cook salmon until it reaches an internal temperature of 145°F, measured in the thickest part, and the flesh flakes easily with a fork.
