Gently poached salmon with a cool, creamy dill sauce. Delicate, light and great warm or chilled.
Serves: 4 | Total time: 25 minutes
Ingredients
- 4 salmon fillets
- 4 cups water
- 1 cup white wine or broth
- 1 lemon, sliced
- 1 bay leaf
- 1/2 cup plain Greek yogurt
- 2 tablespoons chopped dill
- 1 teaspoon lemon juice
Instructions
- Bring the water, wine, lemon slices and bay leaf to a gentle simmer in a wide pan.
- Lower the salmon into the liquid so it is just covered.
- Poach at a bare simmer for 8 to 10 minutes until it reaches 145°F.
- Stir together the yogurt, dill, lemon juice and a pinch of salt.
- Serve the salmon warm or chilled with the dill sauce.
Pin Tip
Keep the liquid just below a boil. Rapid bubbling makes poached fish tough.
Food Safety
Cook salmon until it reaches an internal temperature of 145°F, measured in the thickest part, and the flesh flakes easily with a fork.
