All the crunch of fried chicken baked in the oven with far less oil.
Serves: 4 | Total time: 1 hour
Ingredients
- 8 chicken drumsticks or thighs
- 1 cup buttermilk
- 1 1/2 cups cornflake crumbs
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Cooking spray
Instructions
- Soak the chicken in buttermilk for at least 30 minutes in the refrigerator.
- Heat the oven to 400°F and set a rack on a lined baking sheet.
- Mix the crumbs with the seasonings.
- Coat each piece, place on the rack and spray lightly with oil.
- Bake 40 to 45 minutes until crisp and the chicken reaches 165°F.
Pin Tip
The wire rack lets air reach every side, so the bottom stays crunchy instead of soggy.
Food Safety
Cook chicken to an internal temperature of 165°F, measured with a thermometer in the thickest part without touching bone. Wash hands, boards and utensils after handling raw chicken.
