Salmon and vegetables roast together on one pan with a tangy maple Dijon glaze. Minimal cleanup, maximum flavor.
Serves: 4 | Total time: 30 minutes
Ingredients
- 4 salmon fillets
- 1 pound baby potatoes, halved
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- 3 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Heat the oven to 425°F.
- Toss the potatoes with half the oil and some salt and roast 12 minutes.
- Push the potatoes aside and add the asparagus and salmon to the pan, drizzling the asparagus with the remaining oil.
- Whisk the maple syrup and Dijon, then brush it over the salmon.
- Roast 12 to 15 minutes more until the salmon reaches 145°F and the potatoes are tender.
Pin Tip
Give the potatoes a head start so everything finishes cooking at the same time.
Food Safety
Cook salmon until it reaches an internal temperature of 145°F, measured in the thickest part, and the flesh flakes easily with a fork.
