Tender pasta tossed with flaked salmon, peas and a light lemon cream sauce.
Serves: 4 | Total time: 25 minutes
Ingredients
- 12 ounces pasta
- 1 pound salmon
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 lemon, zested and juiced
- 1 cup frozen peas
- 1/2 cup grated Parmesan
Instructions
- Cook the pasta according to the package, adding the peas for the last 2 minutes, then drain.
- Season and cook the salmon in a skillet until it reaches 145°F, then flake it.
- Melt the butter in the same pan and cook the garlic for 1 minute.
- Add the cream, lemon zest and juice and simmer 3 minutes, then stir in the Parmesan.
- Toss in the pasta, peas and salmon and serve right away.
Pin Tip
Save a cup of pasta water. A splash loosens the sauce if it gets too thick.
Food Safety
Cook salmon until it reaches an internal temperature of 145°F, measured in the thickest part, and the flesh flakes easily with a fork.
